1 pound shrimp, peeled and deveined

2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas, and carrots)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Cooked rice or noodles, for serving

Sesame seeds and sliced green onions, for garnish

Instructions

Preparation: Start by gathering all your ingredients. If using frozen shrimp, ensure they are thawed and pat them dry with a paper towel. Chop the vegetables into bite-sized pieces for even cooking.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Cook the Shrimp: Add the shrimp to the pan and stir-fry for about 2-3 minutes or until they turn pink and opaque. Remove them from the skillet and set aside.

        Stir-Fry the Veggies: In the same skillet, add the garlic and ginger. Sauté for 30 seconds until fragrant. Then add the mixed vegetables and stir-fry for another 3-4 minutes until they are just tender but still vibrant and crisp.

          Combine: Return the cooked shrimp to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss all ingredients to combine well and heat through for about 1-2 minutes. Season with salt and pepper to taste.

            Serve: Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and sliced green onions for an extra burst of flavor.
