8 oz spaghetti or fettuccine

2 cups fresh spinach, washed and chopped

3 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/4 teaspoon red pepper flakes

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and cook for about 1-2 minutes until fragrant, being careful not to burn it.

      Add Spinach and Lemon: Increase the heat slightly and add the chopped spinach to the skillet. Stir for 2-3 minutes until the spinach wilts. Then, add the lemon zest, lemon juice, and red pepper flakes. Mix well.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to combine with the spinach and lemon mixture. If the pasta looks dry, gradually add some reserved pasta water until you reach your desired consistency.
