1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken broth

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 cups fresh spinach

1 cup cherry tomatoes, halved

1 avocado, sliced

Fresh herbs (basil or cilantro) for garnish

Instructions

Marinate the Chicken: In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Add the chicken thighs and coat well. Let marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

    Sear the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs and sear for about 5 minutes on each side, until golden brown.

      Make the Sauce: In the same skillet, add the chicken broth, honey, soy sauce, and Dijon mustard. Stir to combine, allowing the mixture to simmer for about 3-5 minutes until slightly thickened.

        Add Vegetables: In the last few minutes of cooking, add the fresh spinach and cherry tomatoes to the skillet. Stir gently until the spinach has wilted and the tomatoes are heated through.
