Ingredients

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 cup buttermilk

1 tsp vanilla extract

1/2 tsp almond extract (optional)

1 cup powdered sugar (for icing, optional)

2 tbsp milk (for icing, optional)

Sprinkles (for garnish, optional)

Instructions

Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.

    In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Beat in the egg, followed by the buttermilk, vanilla extract, and almond extract (if using). Mix until well combined.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

            Drop by rounded tablespoons onto the prepared cookie sheet, spacing them about 2 inches apart.

              Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.

                Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                  If desired, mix powdered sugar with milk to create a glaze, and drizzle it over the cooled cookies. Add sprinkles on top before the icing sets.
