Amish Chicken and Noodles Delight Recipe

Warm up your evenings with this comforting Amish chicken and noodles recipe, perfect for a hearty family meal. Made with tender chicken, flavorful homemade broth, and soft egg noodles, this dish embodies classic comfort food that brings everyone together around the table. It’s a cherished family recipe that will warm your heart and satisfy your cravings.

Ingredients

1 whole chicken (approximately 4-5 lbs), cut into pieces

8 cups of rich chicken broth

2 cups of egg noodles

1 medium onion, finely diced

3 medium carrots, sliced into rounds

2 celery stalks, sliced

3 cloves of garlic, minced

1 teaspoon of dried thyme

1 teaspoon of dried parsley

1 bay leaf

Salt and freshly ground pepper, to taste

2 tablespoons of unsalted butter

Fresh parsley, chopped, for garnish (optional)

Instructions

In a large, heavy-bottomed pot, melt the butter over medium heat. Once melted, add the diced onion, sliced carrots, celery, and minced garlic. Sauté the mixture for about 5-7 minutes, or until the vegetables are tender and fragrant.

    Next, add the chicken pieces to the pot, followed by the chicken broth, dried thyme, dried parsley, bay leaf, and a generous pinch of salt and pepper. Stir well and bring the mixture to a rolling boil.

      As soon as the broth reaches a boil, reduce the heat to low and cover the pot. Allow it to simmer gently for approximately 1 hour, or until the chicken is fully cooked and tender.

        Carefully remove the chicken from the pot and place it on a cutting board to cool. Once it has cooled enough to handle, shred the chicken into bite-sized pieces, discarding any bones and skin.

          Return the shredded chicken back to the pot, then add the egg noodles. Increase the heat to medium-high and bring the mixture back to a gentle boil.

            Cook the egg noodles according to the package instructions, generally around 7-10 minutes, until they reach an al dente texture. Stir occasionally to ensure they do not stick together.

              Taste the broth and adjust the seasoning with additional salt and pepper if necessary. Before serving, be sure to remove the bay leaf from the pot.

                Ladle the hearty chicken and noodle mixture into bowls, and if desired, sprinkle with freshly chopped parsley for a pop of color and freshness.
