  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 3 medium carrots peeled and sliced
  • 2 stalks celery chopped into small pieces
  • 1 medium potato peeled and diced
  • 1 cup corn kernels
  • 1 cup green beans trimmed and chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 leaf bay leaf
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup heavy cream
  • to garnish fresh parsley chopped

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for 1 more minute until fragrant.
  • Add carrots, celery, and potato; sauté for 5-7 minutes until slightly softened.
  • Pour in vegetable broth and bring to a boil.
  • Add corn, green beans, thyme, parsley, and bay leaf; season with salt and pepper.
  • Reduce heat and simmer for 20-25 minutes until vegetables are tender.
  • Stir in heavy cream during the last 5 minutes if desired.
  • Remove bay leaf before serving and garnish with chopped parsley.
