Ingredients

2 cups fresh strawberries, hulled and halved

1 cup granulated sugar, divided

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-baked 9-inch pie crust

Whipped cream for serving (optional)

Instructions

In a large mixing bowl, combine the halved strawberries with 1/2 cup of granulated sugar. Toss gently and let sit for about 15 minutes to draw out the juices.

    In a separate small bowl, mix the remaining 1/2 cup sugar with cornstarch.

      After the strawberries have macerated, transfer the mixture to a saucepan over medium heat. Add the cornstarch-sugar mixture and lemon juice. Stir continuously until the mixture begins to bubble and thicken, about 3-5 minutes.

        Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly.

          Pour the strawberry filling into the pre-baked pie crust, spreading it evenly.

            Allow the pie to cool at room temperature for at least 1 hour before refrigerating for at least 2 hours to set.

              Serve chilled with a dollop of whipped cream on top if desired. Enjoy!
