2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¾ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup brown sugar

1 teaspoon ground cinnamon (for crumb topping)

½ cup rolled oats

½ cup chopped walnuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

          Combine Wet and Dry Ingredients: Add the dry mixture to the wet mixture gradually, alternating with the sour cream. Mix until just combined.

            Fold in Apples: Gently fold in the diced apples until evenly distributed throughout the batter.

              Make the Crumb Topping: In a separate bowl, combine the brown sugar, 1 teaspoon cinnamon, rolled oats, and chopped walnuts (if using). Add in the melted butter and mix until crumbly.

                Layer the Batter: Pour half of the batter into the prepared baking pan, spreading it evenly. Sprinkle half of the crumb mixture over the batter. Pour in the remaining batter and top with the rest of the crumb mixture.

                  Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
