Ingredients

For the Apple Filling:

4 cups of peeled and diced apples (about 4 medium apples)

1/4 cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1/4 teaspoon nutmeg (optional)

For the Crust and Topping:

1 1/2 cups rolled oats

1 cup all-purpose flour (or gluten-free flour)

1/2 cup brown sugar

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed (or coconut oil for a dairy-free option)

1/4 cup chopped nuts (optional; walnuts or pecans work great)

Instructions

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

      Prepare the Apple Filling:

        In a large bowl, combine the diced apples, brown sugar, cinnamon, lemon juice, cornstarch, and nutmeg (if using). Toss everything until the apples are well coated. Set aside to marinate while you prepare the crust.

          Make the Crust and Topping:

            In another bowl, mix the rolled oats, flour, brown sugar, and salt. Add the cubed cold butter to the mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. If desired, stir in the chopped nuts for added crunch.

              Assemble:

                Take half of the oat mixture and press it evenly into the bottom of the prepared baking pan to form the crust.
