Ingredients

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/2 cup sugar

2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup milk

1 large egg

1 tsp vanilla extract

Oil for frying (vegetable or canola)

Powdered sugar, for dusting

Instructions

Prepare the Apples: In a bowl, toss the diced apples with 1 tablespoon of sugar and set aside for about 10 minutes to release their juices.

Make the Batter: In a separate mixing bowl, whisk together the flour, remaining sugar, baking powder, cinnamon, nutmeg, and salt.

Wet Ingredients: In another bowl, combine the milk, egg, and vanilla extract. Stir until well blended.

Combine: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the prepared apples, ensuring that they are evenly distributed throughout the batter.

Heat the Oil: In a deep pan, heat about 2 inches of oil until it reaches 350°F (175°C).

Fry the Bites: Using a small cookie scoop or tablespoon, carefully drop spoonfuls of the batter into the hot oil. Fry a few at a time, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side, or until golden brown and cooked through.

Drain: Remove the fritter bites using a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.

Dust with Sugar: Once slightly cooled, dust the fritter bites with powdered sugar before serving.

Enjoy: Serve warm as a delightful snack or dessert, paired with your favorite sweet dipping sauce if desired.
