3 cups all-purpose flour

1 cup warm water

1 tablespoon active dry yeast

1 teaspoon sugar

1 teaspoon salt

1/4 cup olive oil or melted ghee

1 tablespoon yogurt (optional for richness)

Instructions

Activate the Yeast: In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients: In a large mixing bowl, add the flour and salt. Make a well in the center.

      Combine Ingredients: Pour the activated yeast mixture, olive oil (and yogurt if using) into the flour well. Mix with a wooden spoon or your hands until a rough dough forms.

        Knead: Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

          First Rise: Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until it has doubled in size.

            Shape the Dough: Once risen, punch the dough down to release the air. Divide it into 10-12 equal portions and shape each portion into a ball.

              Second Rise: Place the dough balls on a floured surface, cover with a cloth, and let them rise for another 30-45 minutes.

                Roll Out: Take each dough ball and roll it out into a thin circle (about 1/8 inch thick) using a rolling pin. Dust with flour to prevent sticking.

                  Cook the Dough: Heat a non-stick skillet or griddle over medium-high heat. Place the rolled-out dough in the skillet and cook for about 1-2 minutes on each side until golden brown and slightly puffed.

                    Serve: Transfer the cooked dough to a plate and cover with a clean towel to keep warm. Serve with your favorite dips, fillings, or as a wrap.
