Ingredients

For the Asado Chicken:

4 chicken thighs, bone-in and skin-on

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon smoked paprika

1 tablespoon ground cumin

1 teaspoon oregano

1 teaspoon salt

½ teaspoon black pepper

Juice of 2 limes

1 teaspoon brown sugar

Fresh cilantro, chopped (for garnish)

For the Lemon Zucchini:

2 medium zucchini, sliced into thin rounds

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

Salt and pepper to taste

Zest of 1 lemon

Red pepper flakes (optional, for spice)

Instructions

Marinate the Chicken:

    - In a large bowl, combine olive oil, minced garlic, smoked paprika, ground cumin, oregano, salt, black pepper, lime juice, and brown sugar. Mix well.

      - Add the chicken thighs to the marinade, making sure they are well coated. Cover and let marinate in the fridge for at least 30 minutes, or up to overnight for best flavor.

        Cook the Chicken:

          - Preheat your grill or oven to 375°F (190°C).

            - If grilling, place the marinated chicken thighs skin-side down on the grill. Cook for about 6-8 minutes, then flip and continue grilling for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C).

              - If using the oven, place the chicken thighs on a baking sheet lined with parchment paper, skin-side up. Bake for 35-40 minutes, or until cooked through and crispy.

                Sauté the Lemon Zucchini:

                  - While the chicken is cooking, heat olive oil in a large skillet over medium heat.

                    - Add minced garlic and sauté for about 30 seconds until fragrant.

                      - Add sliced zucchini to the skillet. Season with salt, pepper, and red pepper flakes (if using). Sauté for about 5-7 minutes or until zucchini is tender but still crisp.

                        - Remove from heat and drizzle with lemon juice and lemon zest. Toss to combine.

                          Serving:

                            - Once the chicken is cooked, let it rest for 5 minutes. Serve the chicken thighs hot, garnished with fresh chopped cilantro.

                              - Plate the sautéed lemon zucchini alongside the chicken for a colorful and tasty meal.
