Ingredients

1 pound ground beef

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece ginger, minced

1 small onion, finely chopped

1 red bell pepper, finely chopped

2 carrots, grated

3 green onions, chopped

¼ cup soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 head butter lettuce or iceberg lettuce, leaves separated

Sesame seeds for garnish

Instructions

In a large skillet, heat the vegetable oil over medium heat.

Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

Add the chopped onion and cook for 2-3 minutes until the onions start to become translucent.

Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a wooden spoon, until browned and fully cooked (around 5-7 minutes). Drain excess fat if necessary.

Stir in the red bell pepper, grated carrots, and half of the chopped green onions. Cook for an additional 3-4 minutes, until the vegetables start to soften.

In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Pour this sauce over the beef and vegetable mixture, stirring well to combine. Allow to simmer for another 2-3 minutes. Season with salt and pepper to taste.

Remove from heat and let cool slightly.

To serve, take a lettuce leaf and spoon a generous amount of the beef mixture into the center. Top with remaining green onions and a sprinkle of sesame seeds. Wrap it up and enjoy!
