Ingredients

2 lbs chicken pieces (with bone and skin, preferably thighs and drumsticks)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground black pepper

1 teaspoon salt (adjust to taste)

2 tablespoons vegetable oil

1 large onion, chopped

4 cloves garlic, minced

1 thumb-sized piece of fresh ginger, grated

2-3 Scotch bonnet peppers (whole for less heat, chopped for more heat)

2 medium carrots, sliced

2 medium potatoes, diced

1 can (14 oz) coconut milk

2 cups chicken broth (or water)

1 bell pepper (any color), chopped

Fresh thyme (a few sprigs) or 1 teaspoon dried thyme

2-3 green onions, chopped (for garnish)

Fresh cilantro (for garnish, optional)

Instructions

Marinate the Chicken: In a large bowl, add the chicken pieces, Jamaican curry powder, allspice, garlic powder, onion powder, black pepper, and salt. Mix well to coat the chicken evenly. Cover and refrigerate for at least 1 hour, preferably overnight to enhance flavors.

    Sauté Aromatics: Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, sautéing for another 1-2 minutes until fragrant.

      Brown the Chicken: Increase the heat to medium-high and add the marinated chicken pieces into the pot. Brown the chicken on all sides, about 5-7 minutes.

        Add Vegetables and Liquid: Once the chicken is browned, add the Scotch bonnet peppers (whole or chopped), carrots, potatoes, bell pepper, thyme, coconut milk, and chicken broth. Stir well to combine.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender. Stir occasionally and add a bit more liquid if it gets too thick.

            Adjust Seasoning: Taste the curry and adjust the seasoning if needed, adding more salt, pepper, or curry powder according to your preference. Remove the whole Scotch bonnet peppers if you prefer less heat.

              Serve: Serve the authentic Jamaican curry chicken hot, garnished with chopped green onions and cilantro if desired. This dish pairs wonderfully with steamed white rice, rice and peas, or roti.
