  • 2 tablespoons olive oil
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 medium pumpkin peeled and cut into cubes
  • 2 medium apples peeled, cored, and diced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • 1 cup coconut milk
  • to garnish fresh parsley or chives chopped

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté for about 5 minutes until translucent.
  • Stir in minced garlic and grated ginger, cooking for an additional minute.
  • Add diced pumpkin and apples, stirring to coat with onion mixture.
  • Pour in vegetable broth and add ground cinnamon and nutmeg; season with salt and pepper.
  • Bring to a boil, then reduce heat and simmer for 25 to 30 minutes until pumpkin is tender.
  • Remove from heat and puree the soup until smooth using an immersion blender.
  • Stir in coconut milk and warm over low heat until heated through.
  • Adjust seasoning if needed and serve hot, garnished with parsley or chives.
