Ingredients

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 ripe avocado, peeled and pitted

1/4 cup Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped (optional)

Salt and pepper, to taste

Lettuce leaves or whole grain bread, for serving

Instructions

In a large mixing bowl, add the ripe avocado. Use a fork to mash it until it reaches a smooth consistency.

    Stir in the Greek yogurt and lime juice to the mashed avocado, mixing until well combined.

      Add garlic powder, onion powder, and mix them into the avocado mixture.

        Incorporate the shredded chicken into the bowl, ensuring it's evenly coated with the avocado mixture.

          Fold in the finely chopped celery, red onion, and cilantro (if using). Season with salt and pepper to taste.

            Chill the chicken salad in the refrigerator for about 30 minutes to allow the flavors to meld together.
