Ingredients

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 cup corn (fresh or frozen, thawed)

1/2 cup cilantro, chopped

1/4 cup feta cheese, crumbled

1/4 cup lime juice (about 2 limes)

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 jalapeño, finely diced for some heat

Instructions

In a large mixing bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, and corn. Gently toss to mix.

    Add the chopped cilantro and crumbled feta cheese to the bowl, being careful not to mash the avocado.

      In a small bowl, whisk together the lime juice and olive oil. Season with salt and pepper to taste.

        Pour the lime dressing over the salad and gently toss until well combined. If using, sprinkle the diced jalapeño on top for an extra kick.

          Taste and adjust seasoning if necessary; add more lime juice or salt if needed.

            Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
