Ingredients

1 medium spaghetti squash

8 oz Boursin cheese (garlic & herb)

1 cup cherry tomatoes, halved

1 cup spinach, chopped

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Carefully cut the spaghetti squash in half lengthwise. Scoop out the seeds and stringy insides.

      Season: Place the squash halves cut side up on a baking sheet. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.

        Bake: Roast the squash in the preheated oven for 30-35 minutes, or until the flesh is tender and easily shredded with a fork.

          Mix the Filling: In a large mixing bowl, combine the Boursin cheese, chopped spinach, and cherry tomatoes. Mix well until everything is evenly coated.

            Stuff the Squash: Once the spaghetti squash is cooked and cooled slightly, use a fork to shred the flesh, creating spaghetti-like strands. Gently fold the shredded squash into the Boursin mixture until evenly combined.

              Fill and Bake Again: Spoon the mixture back into the hollowed-out halves of the spaghetti squash. Place them back on the baking sheet and return to the oven. Bake for an additional 15 minutes, or until heated through and slightly golden on top.

                Serve: Remove from the oven, garnish with fresh basil and grated Parmesan cheese if desired. Serve warm as a delicious and hearty dish!
