Ingredients

1 lb chicken thighs (boneless, skinless)

1 cup buttermilk

1 cup all-purpose flour

1/2 cup panko breadcrumbs

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1/2 cup hot honey (store-bought or homemade)

2 tbsp olive oil

Fresh thyme or parsley for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs and buttermilk. Ensure the chicken is well-coated. Cover and refrigerate for at least 1 hour or overnight for best results.

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Coating: In a large bowl, mix together the flour, panko breadcrumbs, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper until evenly combined.

Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the breadcrumb mixture, pressing gently to adhere the coating. Place the coated chicken on the prepared baking sheet.

Drizzle with Olive Oil: Drizzle the olive oil over the coated chicken evenly to help it crisp up in the oven.

Bake the Chicken: Bake in the preheated oven for about 25-30 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).

Add Hot Honey: Once the chicken is out of the oven, drizzle the hot honey generously over each piece, allowing it to soak into the crispy coating.

Garnish and Serve: If desired, garnish with fresh thyme or parsley. Serve the chicken hot, alongside your favorite side dishes.
