Ingredients

200g (7 oz) pasta (penne or fusilli works well)

200g (7 oz) feta cheese block

1 pint cherry tomatoes (about 300g)

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and freshly cracked black pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large oven-safe baking dish, add the cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and black pepper. Mix well until everything is combined.

      Add Feta: Place the feta cheese block in the center of the dish, nestling it among the tomatoes. Drizzle a little more olive oil over the feta and sprinkle with a pinch of salt.

        Bake: Put the dish in the preheated oven and bake for 25-30 minutes, or until the tomatoes burst and the feta is golden and soft.

          Cook the Pasta: While the feta and tomatoes are baking, cook your pasta according to package instructions until al dente. Drain and set aside.
