1 lb chicken tenderloins

1 cup buttermilk

1 teaspoon hot sauce (optional)

1 cup all-purpose flour

1 cup seasoned breadcrumbs (or panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon salt

½ teaspoon black pepper

¼ cup grated Parmesan cheese (optional)

Instructions

Marinate the Chicken: In a medium bowl, combine the buttermilk and hot sauce (if using). Add the chicken tenderloins and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight for a juicier flavor.

    Prepare the Coating: Preheat your oven to 425°F (220°C). In a shallow dish, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. In another shallow dish, place the seasoned breadcrumbs and mix in the grated Parmesan cheese if using.

      Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing the excess to drip off. Dredge each tenderloin in the flour mixture, shaking off the excess. Then, dip it back into the buttermilk, and finally coat it with the seasoned breadcrumbs, pressing gently to adhere.

        Arrange on Baking Sheet: Place the coated chicken tenders on a baking sheet lined with parchment paper. Make sure they are spaced out to allow even cooking. Lightly spray the tenders with olive oil spray to help them crisp up in the oven.
