2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/2 cup fresh or frozen blueberries

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Then, mix in the almond flour, honey (or maple syrup), applesauce, vanilla extract, and a pinch of salt until well combined.

      Add Dry Ingredients: Stir in the rolled oats, baking soda, and cinnamon until fully incorporated. Make sure there are no dry spots left.

        Fold in the Berries and Nuts: Gently fold in the blueberries and chopped nuts (if using). Be careful not to overmix to keep the blueberries intact.

          Shape the Cookies: Using a tablespoon, scoop out the dough and place it on the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.
