At the heart of any banana-based recipe are ripe bananas. Using bananas that are well past their prime, often with brown spots and a soft texture, is essential for achieving the best results. These overripe bananas are naturally sweeter and add a significant amount of moisture to the brownies. The sugars in ripe bananas caramelize during baking, enhancing the overall flavor and providing a depth that is simply irresistible. When selecting bananas for your Banana Bread Brownies, aim for those that are too soft to eat raw, as they will yield the best results in your batter.

Ingredients

2 ripe bananas, mashed

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper.

In a large mixing bowl, combine the mashed bananas and melted butter until thoroughly mixed.

Add the brown sugar, egg, and vanilla extract to the banana mixture, stirring until well combined.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

Gradually fold the dry ingredients into the banana mixture, mixing just until combined. Be careful not to over-mix.

If desired, carefully fold in chocolate chips and chopped nuts for extra flavor and texture.

Pour the batter into the prepared baking dish, spreading it evenly.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.
