Ingredients

2 ripe bananas (mashed)

1 cup oats (rolled or quick)

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup peanut butter (or nut butter of choice)

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/3 cup dark chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large bowl, combine the mashed bananas, honey (or maple syrup), and peanut butter. Stir in the vanilla extract until well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, almond flour, baking powder, salt, and cinnamon.

        Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. If using, fold in the dark chocolate chips and chopped nuts for added texture and flavor.

          Shape Cookies: Using a spoon, drop tablespoon-sized dollops of batter onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the cookies are firm to the touch.

              Cool: Remove from the oven and let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
