Ingredients

1 cup grated zucchini (approximately 1 medium zucchini)

1 cup ripe bananas, mashed (about 2 medium bananas)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 and 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Press it in a clean kitchen towel to remove excess moisture and set aside.

      Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Mix until well combined and smooth.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

          Incorporate Zucchini: Add the grated zucchini to the wet mixture and stir until evenly distributed.

            Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon, mixing just until combined. Be careful not to overmix.
