Ingredients

For the Homemade Banana Bread:

3 ripe bananas, mashed

1/3 cup melted butter

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts or pecans (optional)

For the Bananas Foster Topping:

2 ripe bananas, sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/4 cup dark rum (optional, can substitute with banana liqueur)

Pinch of salt

For the French Toast:

4 large eggs

1 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

8 slices of the homemade banana bread

Butter for cooking

Instructions

Make the Banana Bread:

    - Preheat your oven to 350°F (175°C). Grease a loaf pan.

      - In a mixing bowl, combine the mashed bananas with melted butter. Mix well.

        - Stir in the brown sugar and granulated sugar until combined.

          - Add the beaten egg and vanilla extract, mixing thoroughly.

            - In another bowl, whisk together the baking soda, salt, and flour. Gradually add this to the banana mixture just until incorporated. Avoid over-mixing.

              - Fold in chopped walnuts or pecans if using.

                - Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes before transferring to a rack.

                  Prepare the Bananas Foster Topping:

                    - In a skillet over medium heat, melt the butter. Add the brown sugar and cinnamon, stirring until the mixture is all combined and bubbly.

                      - Add the sliced bananas and cook for 2-3 minutes until they start to caramelize.

                        - Carefully add the dark rum and ignite with a long lighter (optional for flambé). Let the flames subside, or simply allow the rum to cook down for a couple of minutes, stirring gently. Remove from heat and stir in the vanilla extract and salt.

                          Make the French Toast:

                            - In a large bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.

                              - Heat a non-stick skillet over medium heat and add a little butter.

                                - Dip the slices of banana bread into the egg mixture, allowing them to soak briefly before placing them on the skillet.

                                  - Cook each slice for 2-3 minutes on each side, or until golden brown. Add more butter to the skillet as needed.

                                    Assemble:

                                      - Place the cooked banana bread French toast on serving plates. Top generously with the bananas foster mixture, making sure to drizzle the caramel sauce over each slice.

                                        Serve:
