Ingredients

2 boneless, skinless chicken breasts

1 cup cornstarch

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup vegetable oil (for frying)

2 cups cooked jasmine rice

1 cup shredded carrots

1 cucumber, thinly sliced

1 avocado, sliced

1/4 cup chopped green onions

1 tablespoon sesame seeds (for garnish)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

Instructions

Prepare the Bang Bang Sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Set aside.

    Prep the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness. This will ensure even cooking.

      Coat the Chicken: In a shallow bowl, mix together the cornstarch, salt, pepper, paprika, garlic powder, and onion powder. Dredge each chicken breast in the cornstarch mixture, shaking off any excess.

        Fry the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully place the coated chicken breasts in the skillet. Fry for about 5-6 minutes per side or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken and let it drain on paper towels.

          Slice the Chicken: Once the chicken is slightly cooled, slice it into strips.

            Assemble the Bowl: In serving bowls, layer the cooked jasmine rice, shredded carrots, sliced cucumber, and avocado.

              Add the Chicken: Place the sliced chicken on top of the veggies.

                Drizzle with Sauce: Generously drizzle the prepared Bang Bang sauce over the chicken and veggies.
