Ingredients

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

Salt and pepper, to taste

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped green onions

1 avocado, sliced

1 cup baby spinach

½ cup creamy bang bang sauce (store-bought or homemade: mix ½ cup mayonnaise, 3 tablespoons sweet chili sauce, 1 tablespoon sriracha, lime juice to taste)

Instructions

Prepare the Chicken: Season the chicken pieces with salt and pepper. Set up a breading station: one bowl with cornstarch, another with beaten eggs, and a third with panko breadcrumbs. Dip each piece of chicken in the cornstarch, then the egg, and finally coat with panko breadcrumbs.

    Fry the Chicken: Heat about 1 inch of oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded chicken pieces in batches. Fry until golden brown and cooked through, about 5-7 minutes. Remove and place on a paper towel-lined plate to drain excess oil.
