Ingredients

For the Chicken:

1 lb boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

Oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp lime juice

For the Bowls:

2 cups cooked jasmine rice

2 cups shredded cabbage (green or purple)

1 cup chopped cucumbers

1 small carrot, julienned

¼ cup chopped green onions

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Chicken:

    - Place the chicken breasts in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum tenderness.

      Prepare the Bang Bang Sauce:

        - In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust sriracha to taste depending on your spice preference. Set aside.

          Coat the Chicken:

            - In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper. Remove the chicken from the buttermilk, letting the excess drip off, then dredge each piece in the flour mixture until fully coated.

              Fry the Chicken:

                - In a large skillet, heat oil over medium-high heat (about 350°F or 180°C). Carefully add the chicken pieces and fry for about 5-7 minutes per side or until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken from the skillet and drain on a paper towel.

                  Assemble the Bowls:

                    - In each serving bowl, start with a base of cooked jasmine rice. Top with shredded cabbage, chopped cucumbers, and julienned carrots. Slice the fried chicken and arrange it on top.

                      Add the Sauce:

                        - Drizzle the Bang Bang sauce generously over the chicken and veggies in each bowl.

                          Garnish and Serve:

                            - Sprinkle chopped green onions and fresh cilantro on top. Serve with lime wedges on the side for a zesty finish.
