Ingredients

1 lb boneless, skinless chicken thighs

1 cup cooked jasmine rice

2 cups broccoli florets

1 red bell pepper, sliced

1 cup shredded carrots

1/4 cup green onions, chopped

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

Salt and pepper to taste

2 tablespoons vegetable oil

Sesame seeds for garnish

Instructions

Prepare the Chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes on each side. Remove from pan and let it rest.

    Make Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, and rice vinegar. Mix well until smooth. Set aside.

      Sauté the Vegetables: In the same skillet, add the broccoli florets and sliced red bell pepper. Sauté for about 3-4 minutes until they are vibrant and slightly tender. Add the shredded carrots and cook for an additional 2 minutes.

        Chop the Chicken: Slice the rested chicken thighs into bite-sized pieces and return to the skillet with the veggies. Gently stir to combine.

          Assemble the Bowls: Divide the cooked jasmine rice among four bowls. Top with the chicken and vegetable mixture.
