Ingredients

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil (for frying)

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1 cup shredded carrots

1 avocado, sliced

2 green onions, chopped

Sesame seeds (for garnish)

Bang Bang Sauce:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon lime juice

Salt to taste

Instructions

Marinate the Chicken: Place the chicken thighs in a bowl and pour the buttermilk over them. Cover and marinate in the refrigerator for at least 30 minutes, up to overnight for best flavor.

Prepare the Coating: In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.

Fry the Chicken: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess buttermilk to drip off, then dredge the chicken in the flour mixture, ensuring it's well coated.

Cook the Chicken: Once the oil is hot, carefully add the chicken thighs to the skillet. Cook for about 5-7 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, and a pinch of salt. Mix until smooth. Adjust spiciness with more sriracha if desired.

Assemble the Bowls: In serving bowls, start by adding a scoop of jasmine rice. Top with shredded cabbage, carrots, and sliced avocado. Cut the fried chicken into strips and place them on top.

Drizzle with Sauce: Generously drizzle the Bang Bang sauce over the assembled bowls. Sprinkle with chopped green onions and sesame seeds for garnish.

Serve: Enjoy your delicious Bang Bang Chicken Bowls immediately, mixing all ingredients together if desired.
