Ingredients

1 cup pearl barley

4 cups water or vegetable broth

1 cup milk (dairy or non-dairy)

1 tablespoon honey or maple syrup (optional)

1 teaspoon vanilla extract

1 pinch of salt

1/2 teaspoon cinnamon

1/4 cup chopped nuts (almonds, walnuts, or pecans)

Fresh fruits for topping (such as berries, bananas, or sliced apples)

A dollop of yogurt or plant-based yogurt (optional)

Instructions

Rinse the Barley: Start by rinsing the pearl barley under cold water to remove any dust or debris.

    Cook the Barley: In a medium-sized saucepan, combine the rinsed barley and water (or vegetable broth). Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the barley is tender but still chewy. Stir occasionally.

      Add Dairy and Flavoring: Once the barley is cooked, stir in the milk, honey (or maple syrup), vanilla extract, salt, and cinnamon. Continue to cook over low heat, stirring frequently, for another 5-10 minutes until the mixture thickens to your desired creaminess.

        Add Nuts: Stir in the chopped nuts and remove from heat.
