Ingredients

2 slices of sourdough bread

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your favorite variety)

1/2 cup shredded mozzarella cheese

1/4 cup crumbled blue cheese (optional)

1 tablespoon butter

1 tablespoon olive oil

1/4 cup chopped fresh cilantro (for garnish, optional)

Salt and pepper to taste

Instructions

Prepare the Chicken: In a bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is thoroughly coated. Taste and season with salt and pepper if desired.

    Assemble the Sandwich: Take one slice of sourdough bread and layer half of the mozzarella cheese on it. Top with the BBQ chicken mixture, and then sprinkle the crumbled blue cheese on top (if using). Finish by adding the remaining mozzarella cheese and the second slice of sourdough bread.

      Heat the Pan: In a skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbly.

        Grill the Sandwich: Carefully place the assembled sandwich in the skillet. Cook for 3-5 minutes on one side, or until golden brown and crispy. Use a spatula to gently press down on the sandwich to ensure even cooking.
