Ingredients

  • 2 cups cooked and shredded pulled pork
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 small red onion thinly sliced
  • 1 small green bell pepper thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • In a bowl, mix the pulled pork with BBQ sauce and set aside.
  • Heat olive oil in a skillet over medium heat and sauté the red onion and green bell pepper for 5 minutes.
  • Season the vegetables with garlic powder, onion powder, salt, and pepper, then remove from heat.
  • On each tortilla, layer BBQ pulled pork, sautéed vegetables, and a mix of cheddar and mozzarella cheese.
  • Fold each tortilla in half and press down gently.
  • Cook the folded quesadilla in the skillet over medium heat for 3-4 minutes on each side until golden brown.
  • Remove from skillet and let rest for a minute before cutting into wedges.
