Ingredients

  • 1 pound beef chuck cut into 1-inch cubes
  • 1 cup pearl barley rinsed
  • 1 medium onion finely diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • to taste salt
  • to taste freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • for garnish fresh parsley chopped

Instructions

  • Heat olive oil in a large pot over medium-high heat and sear beef cubes for 5-7 minutes until browned.
  • Remove beef and set aside. In the same pot, sauté onion, carrots, and celery for about 5 minutes until tender.
  • Add minced garlic and sauté for an additional minute.
  • Return beef to the pot and stir in rinsed pearl barley, beef broth, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour.
  • Remove bay leaf and adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with freshly chopped parsley.

Notes

Serve with crusty bread for a complete meal.
