1 lb (450g) beef sirloin, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 tbsp olive oil

1 tbsp butter

2 cups beef broth

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 cup unsweetened almond milk (or any non-dairy milk)

3 tbsp all-purpose flour

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles, rice, or mashed potatoes, for serving

Instructions

Prepare the Beef: Season the thinly sliced beef sirloin with salt, pepper, and paprika. Set aside.

    Sauté Aromatics: In a large skillet, heat olive oil and butter over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until they release their juices and begin to brown, approximately 5-6 minutes.

        Brown the Beef: Increase the heat to medium-high, and add the seasoned beef to the skillet. Sauté until browned, about 3-4 minutes. Stir occasionally to ensure even cooking.

          Make the Sauce: In a small bowl, whisk together the flour and beef broth until smooth. Gradually add this mixture to the skillet, followed by Worcestershire sauce and Dijon mustard. Stir well to combine.

            Add Creaminess: Lower the heat to medium-low and stir in the almond milk, allowing the sauce to thicken for about 5-7 minutes. If too thick, add additional beef broth or almond milk until desired consistency is reached.

              Season and Serve: Taste the sauce and adjust seasoning with salt and pepper as necessary. Remove from heat and serve over cooked egg noodles, rice, or mashed potatoes. Garnish with freshly chopped parsley.
