Ingredients

1 pound beef flank steak, thinly sliced against the grain

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch piece ginger, minced

1 bell pepper, sliced (any color)

1 cup broccoli florets

1/2 cup sliced carrots

1/4 cup green onions, chopped

Salt and pepper, to taste

1 tablespoon sesame oil (optional)

Cooked jasmine rice or noodles, for serving

Instructions

Marinate the Beef: In a mixing bowl, combine the thinly sliced beef with oyster sauce, soy sauce, and cornstarch. Mix well to coat the beef evenly and let it marinate for at least 15 minutes.

Prep the Vegetables: While the beef is marinating, wash and prepare the vegetables. Slice the bell pepper, carrots, and chop the broccoli into small florets. Set aside.

Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Let it sear for about 2-3 minutes without stirring to get a nice brown color. Stir-fry until just cooked through, about another 2 minutes. Remove the beef from the skillet and set aside.

Sauté the Aromatics: In the same skillet, add the minced garlic and ginger. Stir-fry for about 30 seconds, until fragrant, being careful not to burn them.

Add the Vegetables: Add the bell pepper, broccoli, and carrots to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.

Combine Everything: Return the cooked beef to the skillet with the vegetables. Stir everything together, and if desired, drizzle with sesame oil for added flavor. Season with salt and pepper to taste.

Serve: Cook for another minute to heat everything through. Serve hot over jasmine rice or noodles and garnish with chopped green onions.
