4 cups vegetable broth

1 cup lager beer (or your favorite beer)

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 medium onion, diced

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

2 tablespoons olive oil

2 tablespoons all-purpose flour (optional for thickness)

Fresh chives or parsley, chopped (for garnish)

Instructions

Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté until they are tender, about 5-7 minutes. Stir in the garlic and cook for another minute until fragrant.
