Ingredients

3 medium-sized beetroots, roasted and diced

100g feta cheese, crumbled

1 small red onion, thinly sliced

1 cup fresh baby spinach

¼ cup walnuts, roughly chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions

Roast the Beetroots: Preheat your oven to 200°C (400°F). Wrap each beetroot in aluminum foil and place them on a baking tray. Roast for 45-60 minutes, or until a fork easily pierces through them. Let them cool, then peel and dice.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

      Assemble the Salad: In a large mixing bowl, combine the diced roasted beetroots, sliced red onion, baby spinach, crumbled feta cheese, and walnuts.

        Dress the Salad: Pour the dressing over the salad mixture and gently toss until all ingredients are well coated.

          Garnish and Serve: Transfer the salad to a serving platter or individual bowls. Garnish with fresh mint leaves for an aromatic touch.
