2 cups old-fashioned rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), chopped

1/2 cup sunflower seeds

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon salt

1 cup freeze-dried berries (strawberries, blueberries, raspberries)

1/2 cup dried fruit (such as cranberries or raisins)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, sunflower seeds, cinnamon, and salt. Stir well until evenly distributed.

      Add Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract. Pour this mixture over the dry ingredients.

        Combine the Mixtures: Stir until all the dry ingredients are well-coated with the wet mixture. This will help form the crunchy clusters.

          Spread and Bake: Spread the granola mixture evenly onto the prepared baking sheet. Press it down gently with the back of a spatula to encourage clusters.

            Bake: Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it, as it can quickly turn golden brown.
