Ingredients

For the Dumplings:

1 cup all-purpose flour

1/4 cup water (adjust as needed)

1/2 teaspoon salt

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder

1/2 cup finely chopped onions

1/2 cup finely chopped spinach

1 cup cooked and mashed potatoes

1 tablespoon ginger-garlic paste

1 teaspoon garam masala

Salt and pepper to taste

For the Soup:

4 cups vegetable or chicken broth

1 can (14 oz) coconut milk

1 tablespoon red curry paste

1 tablespoon soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 tablespoon ginger, grated

2 teaspoons brown sugar

1 tablespoon olive oil

Fresh cilantro for garnish

Sliced red chili for garnish (optional)

Instructions

Make the Dumpling Dough:

    - In a mixing bowl, combine flour, salt, turmeric, and chili powder. Gradually add water and knead until a smooth dough forms. Set aside covered and let rest for 30 minutes.

      Prepare the Filling:

        - In a skillet, heat a tablespoon of oil over medium heat. Sauté onions until translucent. Add ginger-garlic paste and cook for another minute.

          - In a bowl, mix sautéed onions, spinach, mashed potatoes, garam masala, salt, and pepper. Allow the filling to cool.

            Shape the Dumplings:

              - Divide the rested dough into small balls (about the size of a golf ball).

                - Roll each ball into a thin circle on a floured surface. Place a spoonful of the filling in the center, fold the dough over, and pinch the edges to seal. Repeat until all dumplings are made.

                  Make the Soup:

                    - In a large pot, heat olive oil over medium heat. Sauté garlic and ginger until fragrant.

                      - Stir in the red curry paste and cook for about 2 minutes. Then, add the broth, coconut milk, soy sauce, lime juice, and brown sugar. Bring to a gentle simmer.

                        Cook the Dumplings:

                          - Carefully drop the dumplings into the simmering soup. Allow them to cook for about 10-12 minutes until they float and are cooked through.

                            Serve:

                              - Ladle the soup into bowls. Garnish with fresh cilantro and sliced red chili if desired. Enjoy hot!
