Ingredients

For the Dumplings:

1 cup all-purpose flour

1/2 tsp salt

1/4 tsp turmeric powder

1/2 cup hot water

1 tbsp vegetable oil

For the Curry Soup:

2 tbsp coconut oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 tbsp ginger, grated

2 tbsp curry powder

1 tsp cumin

4 cups vegetable broth

1 can (14 oz) coconut milk

1 cup chopped carrots

1 cup chopped bell peppers

1 cup spinach leaves

Salt and pepper to taste

Fresh cilantro for garnish

Instructions

Prepare the Dumplings:

    In a mixing bowl, combine the flour, salt, and turmeric powder. Gradually add hot water and vegetable oil. Knead until a soft dough forms. Let it rest for 15 minutes while you prepare the soup.

      Make the Soup Base:

        In a large pot, heat coconut oil over medium heat. Add the chopped onions and sauté until they are translucent. Stir in the minced garlic and grated ginger, cooking until fragrant (about 2 minutes).

          Spice it Up:

            Add the curry powder and cumin to the pot. Cook for an additional minute, allowing the spices to release their aroma.

              Create the Soup:

                Pour in the vegetable broth and coconut milk. Stir well and bring to a gentle simmer. Add the chopped carrots and bell peppers. Simmer for about 10 minutes until the vegetables are tender.

                  Form the Dumplings:

                    While the soup is simmering, divide the rested dough into small portions and roll them into balls (about 1 inch in diameter).

                      Cook the Dumplings:

                        Gently drop the dumplings into the simmering soup and allow them to cook for 5-7 minutes, or until they float to the surface.

                          Finishing Touches:

                            Once the dumplings are cooked, add the spinach to the pot. Cook for an additional 2 minutes until the spinach wilts. Season the soup with salt and pepper to taste.

                              Serve:

                                Ladle the hot soup into bowls, making sure each bowl has a generous portion of dumplings. Garnish with fresh cilantro before serving. Enjoy!
