Ingredients

12 oz spaghetti or fettuccine

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper, to taste

4 slices of thick-cut bacon, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

3 large egg yolks

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese (for serving)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Cook the Bacon: In the same skillet, add the chopped bacon and cook until crispy, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Lower the heat and add the cooked chicken back into the skillet with the bacon and garlic. Stir in the heavy cream, letting it simmer for 2-3 minutes.

          Make the Sauce: In a mixing bowl, whisk together the egg yolks, grated Parmesan cheese, and Italian seasoning. Gradually stir in the reserved pasta water to temper the egg mixture, then combine it with the chicken and bacon in the skillet.

            Toss the Pasta: Add the drained pasta to the skillet and toss everything together over low heat for 1-2 minutes, until the sauce thickens and coats the pasta. Adjust seasoning with more salt and pepper as needed.

              Serve: Remove from heat, garnish with fresh parsley, and serve with additional Parmesan cheese.
