3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut (unsweetened or sweetened, based on preference)

1/2 cup unsalted butter, melted

3/4 cup brown sugar, packed

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 1/2 cups all-purpose flour

Optional: 1/2 cup chopped walnuts or macadamia nuts

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

    In a large mixing bowl, combine the mashed bananas and crushed pineapple until well mixed.

      Stir in the melted butter, brown sugar, beaten egg, and vanilla extract until thoroughly blended.

        In a separate bowl, whisk together the baking soda, salt, cinnamon, and flour.

          Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix.

            Fold in the shredded coconut and, if desired, the chopped walnuts or macadamia nuts for added crunch.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
