Ingredients

4 cups fresh blackberries (or frozen, thawed)

1 ½ cups granulated sugar

2 tablespoons lemon juice

1 packet (1.75 oz) fruit pectin (such as Certo)

¼ teaspoon butter (optional, for reducing foaming)

½ teaspoon vanilla extract (optional, for flavor)

Instructions

Prepare the Blackberries: Thoroughly wash the blackberries under cool running water. If using frozen berries, make sure they are fully thawed. In a large pot, crush the blackberries lightly with a potato masher or fork to release their juices.

    Cook the Berries: Add the sugar and lemon juice to the pot with the crushed blackberries. Stir to combine and let the mixture sit for about 15 minutes to macerate, allowing the blackberries to release more juice.

      Add Pectin: After 15 minutes, place the pot on the stove and bring the mixture to a full boil over medium-high heat, stirring continuously. Once boiling, stir in the fruit pectin and mix thoroughly. If using, add the butter at this point to help reduce foam.

        Boil: Continue to boil the jam for 1 to 2 minutes, or until it reaches the desired consistency. Keep stirring to ensure it doesn’t stick to the bottom of the pot. You can perform a plate test by placing a spoonful of the jam on a chilled plate; if it holds its shape after cooling for a minute, it’s ready.

          Add Flavor: Once the desired thickness is achieved, remove the pot from heat and stir in the vanilla extract (optional) for added flavor.

            Jar the Jam: Carefully ladle the hot blackberry jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to remove any residue.

              Seal and Store: Place the lids on the jars and screw on the metal bands until fingertip-tight. If you want to preserve the jam longer, process the jars in a boiling water bath for 5-10 minutes, then let them cool completely on a rack.

                Enjoy: Your homemade blackberry jam can be enjoyed immediately, or stored in the pantry for up to a year. Once opened, refrigerate and use within a month.
