Ingredients

2 cups rice flour

1 cup coconut milk

1 cup water

1/2 cup sugar

2 tsp baking powder

1/4 tsp salt

4 large eggs, beaten

1/2 cup grated fresh coconut

1/4 cup butter, melted (plus extra for brushing)

1/2 cup cheese, grated (preferably queso de bola or sharp cheddar)

2-3 banana leaves, softened (optional, for lining the pan)

Slices of salted duck eggs (optional, for topping)

Powdered sugar and additional grated coconut, for serving

Instructions

Preheat your oven to 375°F (190°C). If using banana leaves, soak them in warm water until pliable and then line your baking dish with them.

    In a large mixing bowl, combine rice flour, baking powder, and salt. Whisk until well blended.

      In another bowl, mix together the coconut milk, water, sugar, and melted butter. Gradually add the wet ingredients to the dry ingredients and stir until just combined.

        Fold in the beaten eggs and the grated coconut, ensuring that the mixture is smooth but not overmixed.

          Pour half of the batter into the prepared baking dish. If desired, top with slices of salted duck eggs.

            Sprinkle half of the grated cheese on top of the first layer. Pour the remaining batter over the cheese and top with the remaining cheese.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

                Once baked, remove from the oven and let it cool slightly before brushing with additional melted butter on top.

                  Serve warm, sprinkled with powdered sugar and extra grated coconut if desired.
