2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk

1/2 pound chorizo sausage, casing removed

1/4 cup all-purpose flour (for gravy)

2 cups milk (plus more if needed)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Make the Biscuits:

      - In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt.

        - Add the cold cubed butter and mix until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and stir until just combined. Do not overmix.

            - Turn out the dough onto a floured surface and gently knead it a few times to bring it together. Pat the dough into a rectangle about 1 inch thick.

              - Cut out biscuits using a round cutter and place them on a baking sheet lined with parchment paper.

                - Bake for 12-15 minutes, or until they are golden brown.

                  Prepare the Chorizo Gravy:

                    - In a large skillet, cook the chorizo over medium heat, breaking it up with a spoon, until browned and fully cooked (about 5-7 minutes).

                      - Sprinkle the additional 1/4 cup of flour over the chorizo and stir to combine. Cook for another minute to toast the flour slightly.

                        - Gradually whisk in the milk, scraping up any bits from the bottom of the skillet.

                          - Add garlic powder, smoked paprika, and season with salt and pepper. Simmer the gravy until thickened, about 5-10 minutes. If the gravy is too thick, add more milk to reach your desired consistency.

                            Serve:

                              - Split the warm biscuits in half and smother them generously with the chorizo gravy.

                                - Garnish with chopped fresh parsley for a pop of color.
