Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, finely chopped

1 bell pepper (red or green), sliced

1 onion, sliced

2 green onions, chopped (for garnish)

Salt to taste

Optional: red chili flakes for extra heat

Instructions

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with black pepper, soy sauce, oyster sauce, cornstarch, and a pinch of salt. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge) for maximum flavor absorption.

    Prepare the Stir-Fry: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and chopped ginger. Sauté for about 30 seconds until fragrant.

        Add Vegetables: Incorporate the sliced bell pepper and onion into the skillet. Stir-fry for about 3-4 minutes until they are tender but still crisp.

          Combine: Return the cooked chicken back to the skillet, mix everything well, and cook for an additional 2-3 minutes. If desired, add red chili flakes for extra heat.

            Finish Up: Taste the stir-fry and adjust seasoning if needed. Remove from heat and garnish with chopped green onions.
