Ingredients

  • 1 cup black rice
  • 1 ½ cups water
  • 1 cup cucumber diced
  • 1 cup mango diced
  • 1 whole ripe avocado sliced
  • 1 cup shelled edamame cooked
  • ½ cup radishes thinly sliced

  • 2 tablespoons soy sauce

  • Fluff the cooked rice with a fork and let it cool slightly.
