Ingredients

For the Blackened Salmon:

4 (6-ounce) salmon fillets

2 tablespoons paprika

1 tablespoon cayenne pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon dried thyme

1 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

For the Avocado Corn Salsa:

1 ripe avocado, diced

1 cup corn (fresh, canned, or frozen)

1 small red onion, finely chopped

1 medium tomato, diced

1 jalapeño, deseeded and minced (optional for heat)

1 lime, juiced

1 tablespoon fresh cilantro, chopped

Salt and pepper to taste

Instructions

Prepare the Spice Blend: In a small bowl, mix paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt to create the blackening seasoning.

Season the Salmon: Pat the salmon fillets dry with paper towels. Brush each fillet with olive oil on both sides, then generously coat each side with the blackening seasoning, pressing it in gently.

Cook the Salmon: Heat a large skillet or cast-iron pan over medium-high heat. Once hot, add a tablespoon of olive oil. Place the seasoned salmon fillets in the pan and cook for about 4-5 minutes per side, or until the salmon is cooked through and has a blackened crust. Remove from the pan and let rest.

Make the Avocado Corn Salsa: In a mixing bowl, combine the diced avocado, corn, red onion, tomato, jalapeño (if using), lime juice, cilantro, and season with salt and pepper to taste. Gently toss together to combine.

Serve: Place the blackened salmon on a plate and top generously with the avocado corn salsa. Enjoy with a lime wedge on the side for extra zest!
